Sous Chef

To effectively and efficiently manage food preparation of menus which meet the market needs; to conduct training and develop culinary expertise amongst employees in all areas; and to maintain quality control on service and standards at an acceptable food cost.

Responsibilities and Duties:

1. Mange Food cost efficiently
2. To maximize employee productivity and to control payroll and variable costs
3. Monitors food standards in all outlets to ensure reasonable standard production
4. Ensures all outlet kitchens adhere to established standards and policies in hygiene and operation
5. Identifies market needs and trends in terms of food products, quality and quantity
6. Monitors, analyzes and conducts menu engineering (bi-annually) and adjust menus if appropriate. Inputs / leads in actual (hard copy) menu design and development.
7. Establishing and conduct effective training programs for all kitchen employees
8. Inspect kitchens, stewarding, outlets, etc. to observe production and preparation methods as well as sanitation and hygiene
9. Meets regularly with F&B and Outlet Managers / Supervisors to discuss customer feedback, food quality and quantity, specific menu items and special promotions. 10. Develop special menus based on available food, season and estimated business, etc
11. Develops new menus and menu costing based on guest orders history and feedback.

Prospective candidates should be ambitious, and willing to work long hours when necessary, a pleasing personality along with relevant experience will be given preference.
